01

Origin

A tasting box is a modern curated format, not an anatomical beef cut. It groups smaller portions from selected cuts so diners can compare texture, marbling, and character.

02

Name and history

How it got its name

In Japan's beef grading system, 'A' is the highest of three yield grades and '5' is the highest of five quality grades. The result is one of fifteen possible yield-and-quality combinations.

How it reached the modern table

Japan established a unified carcass transaction standard that combines yield and quality. Retailers and restaurants later adapted graded beef into curated sets, making it possible to explore several portions in one serving.

03

Marbling

Grade 5 includes the highest marbling category, corresponding to Beef Marbling Standard numbers 8 through 12. A5 means more than marbling alone: meat color, texture, and fat quality also contribute to the quality grade.

04

Best for

Comparative tasting in small portions. Cook each piece briefly, serve in a deliberate sequence, and use light seasoning so differences in texture and fat remain clear.
